Mom and the Collard Greens



One of the many facets of Mom's existence was the cooking and preparing the meals.
One of the favorite things Mom would do would be the collard greens.
Towards the holidays, Mom would prepare them in  her own way.
She would wash them in cold water and redo the washing again.
After this Mom would cut the stalks off and put  the leaves in the pan.
Having got a mess of them prepared; Mom would put them in the bigger pot and begin to cook them.
The smell permeates my mind now thinking of them and the way they were back then.
Mom was always clean with the things she prepared to say the least.
Mom was a lady of refinement and good country values not thought of today.
Mom's collards were the best to be sure for they were mighty delicious and something worthy of putting into  your mouth to eat.
Only now do I wish  for Mom to be here one last time to do the collard greens for us.
I would savor them ands enjoy the ones she'd prepare.
