CREOLE FRICASSEE
No~!!, fricassee is not a stew~!
and if not careful, your time you may rue,
because if you miss the making of the Roux,
when serving it, it may taste like glue.
And the cooking of the rice,
you always want it to turn out nice,
be sure that it is fluffy and real white,
do not uncover until it's reached it's height.
one, to one and three quarters is the proportion,
of rice to water, don't use an ocean.
after thorough washing all the rice,
to remove some starch and things not nice.
So you may need my recipe,
and have a rooster that did not flee,
learn to make it from a jock like me,
and all your guest will say yippee~!
Not Yippee just because it is too hot,
pepper to some guest, who just may not,
appreciate the other kind of HOT,
in French we distinguish piment, from chaude in the pot.
